Is there someone out there who likes chicken but dislikes fried chicken? I honestly can’t think of anyone. Jernej and I went to grab lunch at a popular Slovenian restaurant a while back. I (Maja) ordered Corn Flakes Chicken Tenders there and immediately liked the crunchiness and texture. So, we recreated it for the blog for you all to enjoy. The chicken is juicy and tender, and the outside crust creates texture, crunchiness, and a beautiful golden layer. You can easily prepare these Chicken tenders in three ways. Make them in an oven or air fryer, or deep fry them in a skillet with oil. Choose a light side dish like a salad or french fries to serve. We adore these with a simple honey mustard sauce that we included in the recipe.

How to bake Corn Flakes Chicken Tenders

Feel free to choose your favorite way of preparing these Corn Flakes Chicken Tenders.

Deep-fry in a skillet. Add vegetable oil to a skillet. Wait for the oil to reach 180°C / 350°F. Add the chicken tenders (but don't overcrowd the pan) and fry for 2 - 3 minutes.

Bake them in the oven. Place the baking sheet with the chicken into the preheated oven. Bake for 14 - 16 minutes in a fan-assisted oven to 210 °C / 410 °F or in the conventional oven to 230 °C / 445 °F.

Use an air fryer. If you plan on using an air fryer, bake the chicken tender for 10 minutes at 180 °C / 350 °F or until the chicken is golden outside and has an internal temperature of 64°C / 148 °F.

Storing and freezing

Corn Flakes Chicken Tenders can be stored in two ways. The crispiest and most tender is the same day.

Feel free to store any leftovers in the fridge for up to 3 days. Serve cold in salads or reheat in your microwave, air fryer, or oven. Serve with your favorite side.

We can freeze the Chicken tenders, too. Transfer the meat to a freezer bag or an airtight container when it cools. Seal and place in the freezer for up to a month. Defrost by placing it at room temperature, then reheat it in your microwave, air fryer, or oven. Serve with your favorite side.

METHOD

  • honey mustard sauce

    In a small bowl, stir to combine mayo, mustard, apple cider vinegar and honey. Season with salt and pepper and set aside.

    Add the meat to a large bowl. Season with salt, garlic powder, paprika powder, pepper and lemon juice. Stir using thongs and set aside until needed.

    Arrange the rack one position higher than the middle of the oven, then preheat the fan-assisted oven to 210 °C / 410 °F or the conventional oven to 230 °C / 445 °F. Line a baking sheet with parchment paper, then place a wire rack on top. Instead of an oven, feel free to use an airfryer.

    Add the cornflakes to a large bowl and crush them with your hands. Leave a few bigger pieces here and there. Add the oil and stir to combine. Add flour to a separate plate. Add eggs to a third plate and whisk using a fork. Coat each chicken tenderloin in flour, dip in eggs, and coat in corn flakes. Shake off excess. Transfer the chicken to the prepared baking sheet and repeat with the remaining pieces.
